Baked Chicken

Happy Thursday!

Here is another very delicious recipe that I highly recommend. It's easy, quick and healthy- check, check annnnd check!

I am sure you will see a chicken trend once I start posting more recipes. I do prefer chicken due to the fact that it's lean but I do love beef, too. I also love seafood but generally it is a bit more pricey so I try to only cook with it every once in a while.

This recipe is for a Melt in Your Mouth Baked Chicken from Feeding Your Temple. (Photos also from Feeding Your Temple.)

My favorite part of this recipe is that you sub mayo with greek yogurt. You cannot even taste the greek yogurt once it's baked. It just tastes like a delicious baked outer crust.

I served this dish with a frozen steam-able bag of carrots, broccoli and cauliflower with a little salt and pepper added for flavor.


Ingredients:

4  boneless skinless chicken breasts 
1 5 ounce container 0% plain Greek yogurt 
1/2 cup freshly grated Parmesan cheese 
1 teaspoon seasoning salt 
1 teaspoon garlic powder 
1/2 teaspoon ground black pepper

Directions:

Preheat oven to 375 degrees. Spray baking dish with non-stick cooking spray.

Combine yogurt, Parmesan cheese, and seasonings.

Spread over chicken breasts. Bake for 45 minutes, or until chicken is cooked through and topping is browned. Serve immediately.

Spinach & Pepper Jack Stuffed Chicken

Happy Tuesday, y'all! I have entered what I like to call "a cooking phase". I've told my friend and family to watch out because when I get in a cooking phase, it's serious!

I am pretty darn proud of myself when I cook something that is both delicious and somewhat healthy. Those are my main goals when searching for recipes. I do most of my recipe searching on Pinterest.

Let's start with a pretty awesome recipe.. Spinach and Pepper Jack stuffed Chicken. Super easy and just a few ingredients...my kind of recipe! We added a bit of chili powder to the cajun spice seasoning for a little extra kick :) and we served this dish with brown rice (from a frozen steam-able bag..love those!) and green beans while watching the Thunder game, of course!

Preparation time: 15 minutes
Cooking time: 40 minutes



-1 lb boneless, skinless chicken breasts
-4 oz pepper jack cheese, shredded (you can use up to 6 oz)
-1 c frozen spinach, thawed and drained (you can also use fresh spinach)
-2 tbsp vegetable oil
-2 tbsp Cajun seasoning - click here for my homemade Cajun spice recipe
-1 tbsp breadcrumbs
-Sea salt, to taste
-Freshly ground black pepper, to taste
Directions:

Preheat oven to 350 degrees.

Flatten the chicken to 1/4-inch thickness.

In a medium bowl, combine the pepper jack cheese, spinach, salt and pepper.

Combine the Cajun seasoning and breadcrumbs together in a small bowl.

Spoon about 1/4 c of the spinach mixture onto each chicken breast. Roll each chicken breast tightly and fasten with toothpicks.

Brush each chicken breast with the vegetable oil. Sprinkle the Cajun seasoning mixture evenly over all. Sprinkle any remaining spinach and cheese on top of chicken (optional).

Place the chicken seam-side down onto a tin foil-lined baking sheet (for easy cleanup).  Bake for 35 to 40 minutes, or until chicken is cooked through.

Remove the toothpicks before serving.

Enjoy!

So, I fed some lorakeets (sp?) at the zoo while there for a work education event.
The brother and I went to a Thunder vs. Lakers play-off game. It was intense and amazing!
Apparently I was also un-Oklahoman for never having been to Pop's in Arcadia. So, to make my Oklahomaness official, we checked this place off the list, too. They have over 600 kinds of bottled soda pop. Loved it!
I attended my first barn wedding in Cherokee, OK. It was the cutest rustic/vintage decor. I should have taken more pics.
