Yummy Homemade Granola!

I have been wanting to make my own homemade granola for a while now and tonight I had some free time to give it a try!  I was very happy with the turn out! I have bagged it into single servings (3/4 cup) for breakfast.  I tried it as cereal tonight with milk and it was great.       
For the granola you'll need:
5 cups of oats (quakers oats work)
3 cups nuts (i used pistachios, almonds, and even tough its not a nut, i included sunflower seeds)
1/2 cup dried milk
2 cups coconut flakes, unsweetened but for a sweeter granola go with sweetened
  1 cup vegetable  oil
2 tsp vanilla
1 tsp. salt (don't add salt if any of the nuts have salt)
1/2 cup honey
1 cup dried cranberries (add after baking)
heat oven to 300 degrees


Combine dry ingredients in a large bowl and mix well.  In another bowl mix oil, honey, and vanilla.  Slowly add the liquid to the dry ingredients. 
Put the mixture on a baking sheet (preferably a baking sheet with 1 inch edges) and make sure the granola mix is 1-3 inches thick.  Let the granola bake approximately 20 minutes.  Every 5 minutes use a spatula to turn the granola.  Once the granola is golden brown and hot to the touch, its ready! Mix in the cranberries and enjoy with milk, some plain yogurt, or bag it to share with others (thats what I am doing for my mom tomorrow)
